Guay Jab Ingredients

500 grams Guay Jab noodles

200 grams crispy pork

300 grams pork offal

100 grams pork blood

2 fried tofu

2 boiled eggs

2-3 liters of stock

3 tablespoons of Chinese five spices powder

3 tablespoons of sugar

2 tablespoons of light soy sauce

1 tablespoon of sweet dark soy sauce

1 tablespoon of salt

1 teaspoon of ground pepper

1 tablespoon of oyster sauce

4 cloves of garlic, roughly crushed

2 coriander roots, pounded

Instructions to make Guay Jab

1. Boil water then add the Guay Jab noodles to boil until the noodles are soft and well cooked. Scoop out the noodles and set aside. While boiling, the noodles should be stirred so that the noodles do not stick together.

2. Bring eggs to boil for about 5-6 minutes.

3. Fry minced garlic and tofu with oil until golden brown and set aside.

4. Pour the stock into the pot and add pounded coriander root, crushed garlic and Chinese five spices powder, then stir until fragrant.

5. Add the ground pepper, oyster sauce, black soy sauce, light soy sauce, salt / fish sauce and sugar for seasoning and taste as you like. You can add a little more dark soy sauce to give it a nice color.

6. Put pork offal, pork blood, and boiled egg to boil for 15-30 minutes or until cooked, then scoop out and cut into bite-sized pieces.

7. Serve by placing the noodles in a bowl first, followed by pork offal, eggs, crispy pork, crispy fried tofu. Put the soup and garnish with coriander, spring onion and fried garlic as desired.
